DEFINITION

This Recommended Practice describes a procedure for the determination of the trans fatty acid content of vegetable fats and oils by capillary column gas chromatography (GC). Fatty acids are identified by their retention times and quantitated by determination of the ratio of the area under the relevant peak to the sum of the areas under all the peaks for the fatty acids. The fat or oil is converted to its fatty acid methyl ester and then analyzed by capillary column GC. This method is identical to an IOC Method (References, 1). According to this method, the trans fatty acid content of a vegetable fat or oil is given by the sum of the following acid contents relative to the total fatty acids: trans-octadecenoic (t 18:1), trans,trans-octadecadienoic (tt 18:2), cis,trans and trans,cis octadecadienoic [(ct + tc) 18:2] and trans,cis,trans, cis,cis,trans, cis,trans,cis, and trans,cis,cis octadecatrienoic [(tct + cct + ctc + tcc) 18:3].



SCOPE

Applicable to oils and fats containing fatty acids with 10–24 carbon atoms. Including trans unsaturated fatty acids with 18 carbon atoms that may be present at specific concentrations in natural vegetable fats and oils and in such oils that have undergone refining. It is not applicable to vegetable fats that have undergone any hydrogenation process.
